Chicken Pulimunchi Ingredients
- 8–10 dried red chillies, adjusted to taste
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- ½ teaspoon fenugreek seeds
- ½ teaspoon black peppercorns
- ½ teaspoon turmeric powder
- 6–8 garlic cloves
- A small lemon-sized ball of tamarind
- 2 tablespoons grated coconut (optional)
Step 1: Prepare the Chicken
Wash and clean the chicken pieces. Drain the excess water and keep them aside. Add a little salt and turmeric powder, mix well, and let the chicken rest for 10–15 minutes.
Step 2: Prepare the Masala
Dry-roast the dried red chillies, coriander seeds, cumin seeds, fenugreek seeds, and black peppercorns over low heat until fragrant. Allow them to cool.
Soak the tamarind in a little warm water. Grind the roasted spices with garlic, turmeric, tamarind pulp, and a little water to make a smooth, thick masala paste. Add grated coconut if you prefer a slightly thicker curry.
Step 3: Fry the Onions
Heat coconut oil in a deep pan or kadai. Add the chopped onions and curry leaves. Fry until the onions turn soft and golden brown.
Add the ginger-garlic paste and cook for another minute until its raw smell disappears.
Step 4: Cook the Chicken
Add the chicken pieces and mix thoroughly with the fried onions. Cook for 5–7 minutes, stirring occasionally, until the chicken changes colour.
Step 5: Add the Pulimunchi Masala
Add the prepared masala paste and mix well so that every chicken piece is coated. Cook for 3–5 minutes over medium-low heat to bring out the flavours.
Step 6: Simmer the Curry
Add water according to your preferred consistency and adjust the salt. Cover and simmer for approximately 20–25 minutes, stirring occasionally, until the chicken is fully cooked and tender.
If the curry becomes too thick, add a little hot water. If it is too thin, simmer uncovered for a few more minutes.
Step 7: Serve Hot
Taste the curry and adjust the sourness or salt if needed. Turn off the heat and allow it to rest for 5 minutes before serving.
Your spicy and tangy Mangalorean Chicken Pulimunchi is ready to enjoy!
Tips for the Best Chicken Pulimunchi
- Choose the right chillies: Use dried red chillies suited to your preferred spice level.
- Roast the spices carefully: Avoid burning them, as burnt spices can make the curry bitter.
- Balance the tamarind: Add tamarind gradually to achieve the perfect tangy flavour.
- Use coconut oil: It gives the curry a traditional coastal Karnataka aroma.
- Allow the curry to rest: A few minutes of resting helps the flavours blend together.
- Adjust the consistency: Traditional Pulimunchi is generally spicy and tangy, with a thick masala coating.

Frequently Asked Questions
Q1. What does Chicken Pulimunchi mean?
Chicken Pulimunchi is a Mangalorean-style chicken curry. “Puli” means sour and “Munchi” means chilli in Tulu, referring to its signature tangy and spicy flavour.
Q2. Is Chicken Pulimunchi very spicy?
Traditional Chicken Pulimunchi can be quite spicy. You can reduce the number of dried red chillies to make a milder version.
Q3. Can I make Chicken Pulimunchi without coconut?
Yes. Coconut is optional in this recipe. You can prepare the curry without it for a more direct chilli-and-tamarind flavour.
Q4. Can I use boneless chicken?
Yes. Boneless chicken works well, but it may cook faster than bone-in chicken. Check for doneness earlier to avoid overcooking.
