Mangalore Idli and Chicken sukka recipe at home

Ingredients for Mangalore Idli

  • 2 cups idli rice
  • 1 cup urad dal
  • 2 tablespoons cooked rice
  • ½ teaspoon fenugreek seeds
  • Salt to taste
  • Water as needed

 

How to Make Mangalore Idli

Step 1: Soaking
Wash rice and soak for 5–6 hours.
Soak urad dal and fenugreek seeds separately for 4 hours.
Step 2: Grinding
Grind urad dal to a smooth fluffy batter.
Grind rice with cooked rice slightly coarse.
Mix both batters and add salt.
Step 3: Fermentation
Cover and keep overnight (8–10 hours) for fermentation.
Batter should rise well.
Step 4: Steaming
Grease idli plates.
Pour batter and steam for 10–12 minutes.
Soft Mangalore idlis are ready.

Chicken sukka



Ingredients for Mangalore Chicken Sukka

500 grams chicken (cleaned and cut)
1 onion (finely chopped)
1 tablespoon ginger-garlic paste
2 tablespoons oil
1 sprig curry leaves
Salt to taste
½ teaspoon turmeric powder
For Masala Paste
1 tablespoon coriander seeds
4–5 dry red chilies
1 teaspoon cumin seeds
½ teaspoon black pepper
½ cup grated coconut
Small piece tamarind

How to Make Chicken Sukka

Step 1: Roast Masala
Dry roast coriander seeds, cumin, pepper, and red chilies.
Add grated coconut and roast until golden.
Grind with tamarind into thick paste.
Step 2: Cook Chicken
Heat oil in a pan.
Add curry leaves and onion.
Fry until golden.
Add ginger-garlic paste and sauté.
Add chicken, turmeric, and salt.
Cook for 5–7 minutes.
Step 3: Add Masala
Add ground masala paste.
Cook on medium flame until chicken is soft and masala becomes dry.
Stir occasionally.Spicy and flavorful Chicken Sukka is ready.
